St. Patrick's Day Recipes

St. Patrick's Day.

Let's cook some Irish dishes...

 Irish Stew...


Ingredients:

2 lbs. boneless lamb (shoulder)
some all-purpose flour
some salt
a little pepper
3 teaspoons fat
some hot water, some cold water
6 small onions
4 stalks celery, with leaves
4 small carrots
6 not too big potatoes
1 turnip
2 teaspoons concentrated meat extract


To Cook:

Set out a large kettle or Dutch oven having a tight fitting
cover. And prepare the lamb.

Cut meat into pieces (like 2 inches). Mix flour, salt, and 
pepper and coat the mixture on the meat evenly.

Melt fat in the kettle (or Dutch oven). When it's hot, brown 
lamb pieces on all side over medium heat. Turn occasionally.
Pour off the fat. Slowly pour water in the kettle. Cover and 
bring to boil over high heat. Then lower the heat and simmer 
for 1.5 hours or until meat is tender.

Prepare vegetable. peel, wash, cut, slice, etc.

About 45 minutes before end of cooking period, add vegetable 
into the kettle. Put salt and pepper to taste. Cover and 
simmer for further 45 minutes.

When thing's well-cooked, dissolved in the meat extract.

To thicken the liquid, dissolve flour with hot water, and 
slowly add it into the kettle. Bring to another boiling. 

Garnish stew with chopped parseley. Serve immediately.

Shamrock Sandwiches:

For the spread -- Cream butter or magarine until flufy. 
Blend in chopped chives, parseley or water cress, mayonaise, 
horse-radish and salt. Add a drop or more of green food 
coloring (so that it's green and looks Irish?!?). Set aside.

For Shamrocks -- Place white of whole wheat bread slices on a
flat surface. With a shamrock-shaped cookie cutter, or a 
sharp knife, carefully cut shamrocks from the bread. Spread
the cut-outs evenly with butter. Garnish with some parseley 
or water cress, chopped chives, or anything you like (green).


Irish Coffee:

Fill three quarters of mug with coffee. Add 1 teaspon sugar.
Pour 1 jigger Irish Whiskey and 1 jigger Kaluah into the 
coffee. Top it with whipped cream. Then sprinkle with cocoa.
