International Recipes Edition

Mother's Day is close. If you don't have anything for your
mom yet, how about fixing her something good to eat?
Well... I did some search, and found numbers of "Mother's
Day" recipes. I don't understand why we have to have a
specific food for Mother's Day. It's not like Thanksgivings
that comes with a story. For me, if I'll cook for my mom,
I'll make something low-sugar & low-calory.
Our recipes today are diabetic friendly. Good for both mom
and dad :-)
Caramel Apple Salad:
3 large Granny Smith Apples; cored and diced
1/2 cup walnuts
1/2 cup raisins
1 cup chopped celery
1 small package, sugar free Butterscotch puddding
2 cup non-fat plain yogurt
Mix cored and diced apples, raisins, celery and walnuts well.
Mix butterscotch pudding and plain yogurt well.
Mix pudding mixture with apple mixture well, and
Refrigerate for at least an hour before serving.
Basil Chicken Soup:
1 tablespoon butter or margarine
1 large onion, chopped
1 clove garlic, pressed or minced
1 tablespoon all-purpose flour
3-1/2 cups chicken broth (low-sodium)
1 large russet potato, peeled and cut into 1/2-inch cubes
1 cup diced cooked chicken
1/2 cup chopped fresh basil
1/2 cup shredded light jarlsberg cheese
In a 2 to 3 quart pan, combine butter, onion, and garlic.
Stir occasionally over medium heat until onion is limp and
slightly tinged with brown, about 10 minutes. Stir in flour
to coat onion. Gradually stir in broth, and bring to a boil
on high heat.
Add potato -- cover and simmer over low heat until potato is
tender when pierced, 15 to 20 minutes.
Add chicken -- cover and simmer just until chicken is hot,
1 to 2 minutes. Stir in basil. Ladle into bowl and offer
cheese to add to taste.
Apple Pudding Cake:
(Diabetic Friendly)
2 Large Apples (McIntosh & Granny -- Smith are great)
1 1/2 Teaspoons Lemon juice
5 Tablespoons sugar substitute
1/2 Teaspoon Cinnamon
1 Pinch Nutmeg
1 Pinch Allspice
1 Cup Self-rising flour
1 Large Egg OR 2 egg whites OR
1/4 Cup egg substitute, liquid
3 Tablespoons brown sugar substitute
2/3 Cup Cold water
1 Cup Boiling water
Core and slice the apples. Arrange in rows or circles in a
square or round 9 inch baking pan, sprayed with nonstick
spray. Sprinkle lightly with lemon juice, sweetener and
spices. Mix flour, egg, brown sugar substitute, and cold
water. Beat until smooth. Spoon batter over the apples. Pour
boiling water over the batter in a thin stream. Bake
uncovered in a preheated oven at 375 degrees for 30 minutes.
Diabetic Chocolate Chip Cookies:
¼ c. margarine, softened
1 ½ tsp. vanilla
1 c. + 2 tbsp. flour
2 tsp. baking powder
½ c. semi-sweet chocolate chips
¼ c. chopped nuts
4 tsp. liquid sweetener
1 egg
½ tsp. salt
¼ tsp. soda
Combine first 4 ingredients in small mixer bowl. Beat at
high speed for 1 to 2 minutes or until light and fluffy.
Add next 4 ingredients with ½ cup water. Blend at low speed
until well combined. Stir in chocolate chips and nuts. Dough
will be soft. Drop on ungreased cookie sheet. Bake at 425
degrees (F) for 10 to 12 minutes.
Any kind of tea will be great for the occasion.

Prepare a Fragrant Treat for Mom this Mother's Day

Most any mom will tell you that some of her favorite Mother's
Day gifts were the ones the kids made themselves. But
home-made gifts don't have to be all construction paper and
glitter. You can create a memorable, exquisite and affordable
gift for mom with this hand-crafted love potion, accompanied
by a matching scented body lotion. This delightful fragrance
has an exotic yet fresh floral bouquet that enlightens the

For the perfume, you will need:
-Distilled Water
-3 Tbsp. Vodka
-Mom's Bouquet Essential Oils Blend
*4 drops Rose essential oil
*10 drops Jasmine otto essential oil
*9 drops Orange essential oil
*10 drops Sandalwood essential oil
First add the essential oils to a 10-ml dark-colored bottle.
Add the vodka and fill the rest of the bottle with water.
Shake well. Allow the perfume to settle for at least 12
hours. Store in a cool dry place.
For the scented body lotion you will need:
-One 8-oz bottle filled with unscented body lotion
-Mom's Bouquet Essential Oils Blend
*4 drops Rose essential oil
*10 drops Jasmine otto essential oil
*9 drops Orange essential oil
*10 drops Sandalwood essential oil
First pour the essential oils into a 10-ml dark-colored
bottle and shake well. Add the entire blend to the lotion and
shake very well for a few minutes. Shake prior to each use.
